Lighter in color only though – they still have the soft, chewy texture of a brownie but with less chocolate, they have a more subtle flavor like butterscotch, thanks to the use of brown sugar.
These blondies are super simple to make. Start by whisking flour, salt, and baking soda together. In a separate bowl, mix butter and brown sugar together until smooth. Add egg, mashed banana and vanilla and mix until smooth. Combine dry ingredients with the banana mixture and add chocolate chips and pecan nuts. Bake for 30-35 minutes and leave to cool completely before cutting. Enjoy!
To make Chocolate Chip Banana Bread Blondies, you will need the following ingredients:
Preheat the oven to 350 °F. Line a 8 by 8-inch pan with parchment paper and grease with butter.
Mix 1¼ cups of flour with ½ a teaspoon of salt and ¼ teaspoon of baking soda until fully combined. Set to one side.
Mix ½ a cup of melted butter and ¾ cup of brown sugar together in a large bowl until the mixture is smooth and paste-like.
Add one large egg, ½ a cup of mashed banana and ¾ teaspoon vanilla. Keep mixing until completely smooth.
Add the dry ingredients to the banana mixture and stir until just combined.
Stir 1 cup of chocolate chips and ½ a cup of coarsely chopped pecan nuts into the batter.
Transfer the batter to the prepared pan. Bake in the oven for 30-35 minutes until the top of the cake is light golden brown and a toothpick inserted in the center comes out clean.
Place the baking pan on a wire rack and leave to cool completely before lifting the cooked blondie cake out and cutting it into squares.
