½ cup Rye flour
1 cup All-purpose flour
½ cup Dutch-process Cocoa powder
1 tsp Baking powder
½ tsp Baking soda
½ tsp Kosher Salt
2 Bananas very ripe, mashed (about â…” cup mashed)
1 Large eggs at room temperature
¾ cup Brown sugar light, packed
2 tsp Vanilla extract
â…“ cup Buttermilk
6 tbsp Unsalted butter melted and cooled to lukewarm
1 cup Chocolate chips or chunks, dark
1 tbsp Cacao nibs for topping
1 tbsp Turbinado sugar for topping

As you know, I am always looking for healthy treats that I can make for the kids and these Chocolate Banana Rye Muffins are a great healthy recipe. These muffins are a great way to use up any ripe bananas hanging around your fruit bowl.

They are so easy to make too. Start by mixing dry ingredients together in a bowl. In a separate bowl, mix mashed banana with egg, brown sugar and vanilla. Mix dry ingredients with the wet ingredients and fold in a cup of chocolate chips. Top with cacao nibs, turbinado sugar and a few spare chocolate chips and bake in the oven. Enjoy!

Steps to make Chocolate Banana Rye Muffins

Heat the oven and prepare a muffin tray

Preheat the oven to 375 °F. Lightly grease a 12 cup muffin tray and line with paper muffin cups.

Combine dry ingredients

Mix 1 cup of all-purpose flour with ½ a cup of rye flour, ½ a cup of cocoa powder, a teaspoon of baking powder, ½ a teaspoon of baking soda and ½ a teaspoon of salt in a large bowl.

Make banana mixture

Place 2 ripe mashed bananas in a separate bowl and whisk in 1 large egg and ¾ cup packed light brown sugar before adding 2 teaspoons of vanilla extract.

Add wet ingredients to dry ingredients

Pour the wet mixture into the bowl with the dry ingredients and add â…“ cup of buttermilk and 6 tablespoons of melted butter. Stir until the ingredients are just combined.

Fold in chocolate chips

Gently fold in 1 cup of chocolate chips (minus a few chips reserved for topping).

Add the batter to the muffin tray

Spoon the batter into the muffin tray. Fill each cup with about ¼ cup of muffin batter.

Top with cacao nibs and chocolate chips

Top each muffin with a few cocoa nibs and a sprinkle of turbinado sugar. Place a few chocolate chips on top of each one.

Bake for 16-18 minutes until a toothpick inserted comes out almost clean.

Transfer the muffins to a wire rack and leave to cool for about 15 minutes.

These muffins make a really healthy snack when served with a glass of milk.
