It is easy to whip up, doesn’t require fancy ingredients, and will feed a crowd. The cake is loaded with apples, it’s buttery, moist and dense, and topped with cinnamon sugar.
To make this recipe, preheat the oven and spray an 8-inch springform pan with cooking spray. Use a stand mixer fitted with the paddle attachment (or a large mixing bowl with an electric mixer) to combine the wet ingredients: butter, sugar, cream cheese, vanilla, and eggs until creamy and free of lumps. Prepare cinnamon sugar and set aside. In a separate bowl, combine the dry ingredients: all-purpose flour, baking powder, salt, and 2 tablespoons of cinnamon sugar. Preheat the oven to 350 °F and spray an 8-inch springform pan.
Beat 1 ½ cups of sugar with ½ cup softened butter, 1 teaspoon vanilla extract, and 6 ounces cream cheese in a bowl until light and creamy.
Beat in 2 eggs one at a time, beating well after each addition until combined.
In a separate bowl, whisk together 1 ½ cups all-purpose flour, 1 ½ teaspoons baking powder, and ¼ teaspoon salt.
In a small bowl, whisk together 2 teaspoons ground cinnamon with ¼ cup sugar.
Stir 2 tablespoons of the cinnamon-sugar mixture into the flour mixture and reserve the remaining cinnamon sugar for topping.
