4 large Apples gala or 6 small ones, peeled, cored, diced
6 Eggs
1 cup Granulated sugar
1 cup All-purpose flour
1 tsp Vanilla extract
1 tbsp Vinegar
¾ tsp Baking soda mixed with ¼ tsp vinegar
For the Topping:
3 Apples peeled, cored, thinly sliced
For the Glaze:
½ cup Heavy cream
1 cup Confectioners' sugar
1 tsp Cinnamon

Everyone has their favorite simple and delicious apple cake and this Cinnamon Glaze Apple Cake is definitely my choice, by far!

A simple vanilla and apple cake base topped with the most beautiful, flower-like, apple-slice arrangement and drizzled with a heavy cream, powdered sugar and cinnamon glaze over the top. I don’t think there is a recipe that beats this cake!

Steps to make Cinnamon Glaze Apple Cake

Preheat oven and prepare baking pan

Preheat oven to 350 °F and lightly grease or line the base of a 9-inch springform with cooking spray or baking parchment paper.

Combine eggs and sugar

Using an electric whisk, beat eggs and sugar on high speed for 2-3 minutes until light yellow and thickened to triple the size.

Add batter ingredients

With the electric beater lowered to a low speed, beat in the vanilla, flour, baking soda and vinegar and combine well.

Add apples

Combine apples with batter mix and transfer to the prepared springform baking pan.

Bake

Bake for 55-60 minutes until a wooden toothpick inserted into the center comes out clean. Rest cake for 10 minutes before removing from pan and allow to cool completely.

Prepare topping

Prepare a bowl of ice-cold water and set aside. Blanch sliced apples in a pot of boiling water for less than a minute, to soften. Remove apples and transfer immediately to the ice water to stop the cooking process. Dry and drain excess water on a paper towel.

Arrange apples

Arrange apples on top of the baked cake, in circles, starting outwards working towards the center, forming a rose.

Prepare glaze

In a small saucepan over medium heat, heat heavy cream and add powdered sugar and cinnamon. Whisk until smooth and heated through. Allow to cool a little before using. (Do not cool too long or glaze will harden.)

Serve

Drizzle glaze over cake and serve.
