This Creamy Herb Mushroom Chicken is a family favorite in my house. We all love the combination of chicken and mushrooms with delicious freshly chopped dill and parsley. My top tip if you are trying this recipe, make sure you prepare all of your ingredients before you start. Mince the garlic, chop your herbs and slice the mushrooms before you turn on the heat.
To make this delicious meal, start by cooking mushrooms until they are golden brown. Transfer to a plate. Cook chicken and add minced garlic. Sauté for 1 minute before adding chopped dill, parsley, green onion to the pan. Once soft, add the mushrooms to the pan then stir in heavy cream. Bring the sauce to a light boil. Once the sauce is slightly thickened, remove from heat. Taste and season if necessary.
To make Creamy Herb Mushroom Chicken, you will need the following ingredients:
Heat ½ a tablespoon of oil and ½ a tablespoon of butter in a large skillet over medium heat. Add ½ pound of sliced mushrooms. Season with ½ teaspoon of garlic salt and saute until soft and golden. Once cooked, transfer the mushrooms to a plate.
Season chicken tenders all over with 1 teaspoon of garlic salt. Add another ½ tablespoon of butter and ½ a tablespoon of oil to the same pan. Add the seasoned chicken in a single layer and sauté for 2 minutes on each side until just cooked through.
Add 2 minced cloves of garlic and sauté 1 minute, stirring frequently. Once the garlic is fragrant, add ¼ cup each of chopped dill, parsley and green onion to the pan. Stir for another 1 minute to soften the herbs.
Return the mushrooms to the pan.
Stir in ¾ cup of heavy cream and bring to a light boil. Cook for 2 minutes until the sauce starts to thicken. Remove from heat.
Season the sauce with garlic salt before serving.
