To make Creole Potato Salad, you will need the following ingredients:
In a large pot, cover 3 pounds of cut potatoes, 1 tablespoon crab boil and a few pinches of salt in water, reaching about 1-inch above the potatoes. Bring to a boil then reduce heat and simmer for about 15-20 minutes until fork tender. Remove potatoes and drain excess liquid.
Toss boiled potatoes with 1 tablespoon of apple cider vinegar and ¾ teaspoon of Creole seasoning until coated.
