This amazing Crusty Apple Pie is so simple yet extremely tasty with its apple and cinnamon filling and its sugar encrusted lid. I love apple pie – I could eat it all day, every day! It is real comfort food and this particular version is unbeatable!
Start by making pastry and placing it in the refrigerator to chill. Roll out one piece of pastry and line a baking dish with it. Fill with sugar, cinnamon, apples and butter. Top with a lid made from pastry. Coat the lid with milk and sprinkle with sugar. Bake the pie in the oven until golden brown on top and the filling is bubbling.
To make this Crusty Apple Pie, you will need the following ingredients:
Place 2 cups of flour in a bowl and add 4 ounces of cream cheese, ¾ teaspoon of salt, and 2 tablespoons of buttermilk powder. Mix or pulse (if using a food processor) together until the mixture resembles evenly sized crumbs. Cut 10 tablespoons of cold butter into pieces and work it into the flour, leaving some visible pieces. Add 3-4 tablespoons of water and bring together. If it's too dry, add more water 1 tablespoon at a time until the dough holds together.
Divide the dough into two pieces, one slightly bigger than the other. Shape into disks and cover each one with plastic wrap. Chill in the refrigerator for at least 30 minutes.
Remove the larger disk from the refrigerator and transfer it to a work surface. Roll it into a 13" circle. Place it in a 12" shallow pizza pan, or onto a parchment-lined baking sheet.
Sprinkle 5 tablespoons of sugar and 1 tablespoon of cinnamon evenly over the pastry crust. Spread the apples out evenly over the sugar and cinnamon and sprinkle with a dash of salt and a drizzle of lemon juice. Distribute little cubes of butter over the filling.
Remove the second piece of dough from the refrigerator, and roll it into a 12" circle. Place it over the apple filling. Bring the edge of the bottom crust over the lid and press it firmly to seal. Make a decorative crimp, if you like.
Brush the pastry crust with milk, and sprinkle with coarse white sparkling sugar. Cut a dime-sized hole in the center of the lid to allow the steam to escape.
Preheat the oven to 425 °F.
Bake the pie in the oven for 15 minutes before reducing the heat to 375 °F. Bake for an additional 25 - 35 minutes until the crust is golden brown and the filling starts to bubble up through the hole in the top.
Remove the pie from the oven and leave to cool for about 1 hour until it reaches room temperature.
Serve large slices of pie with ice cream or whipped cream.
