These Easy Cauliflower Fritters are a fantastic lunch or light dinner recipe. They are a really delicious way to use cauliflower. I usually make a double batch of these fritters. Someone always asks for seconds, and if there are any leftovers, I like to reheat them for lunch the next day.
To make these, start by boiling cauliflower and potatoes. Drain well and mash in a large bowl. Add flour, Parmesan cheese, egg, salt, pepper, and parsley, combine well. Add oil to a medium-sized frying pan and heat over medium heat. Use about 2 heaping spoonfuls of batter for each fritter. Drop the mixture into the pan and flatten using the bottom of the spoon. Cook on medium heat until browned on both sides. Transfer to a paper towel lined plate and serve immediately.
To make Easy Cauliflower Fritters, you will need the following ingredients:
Place cauliflower florets and cubed potatoes in a pot of boiling water and cook until tender.
Drain well for about 10 minutes in a colander. Transfer to a large bowl and mash well.
Add 2 tablespoons of all purpose flour, ½ a cup of freshly grated Parmesan cheese, 1 large egg, ¼ teaspoon of salt, 1-2 dashes of black pepper, and 1 tablespoon of finely chopped fresh Italian parsley to the bowl and stir well to combine.
In a large pan or skillet, heat 1-2 tablespoons of olive oil over medium heat.
