Easy Chicken and Dumplings is one of my cheat dinners – I make this when I need a quick wholesome dinner quickly. What makes it a cheat meal you ask? Well, I use canned soup for the base and canned buttermilk biscuits for the dumplings which means that I can whip up a filling dinner for 6!
I start by bringing chicken broth, chicken, chicken soup and poultry seasoning to a boil. While the soup is simmering, I roll out the biscuits on a floured surface. I cut them into strips which I drop into the boiling soup mixture and cook for a further 15-20 minutes.
To make the Easy Chicken and Dumplings, you will need the following ingredients:
Place the chicken broth, chicken, chicken soup and poultry seasoning in a double bottom pot or a Dutch oven and bring to a boil over medium-high heat.
Cover the soup mixture and reduce the heat to low. Simmer while stirring occasionally for about five minutes. Then increase the heat to medium-high and return the soup to a gentle boil.
Roll out the biscuits on a lightly floured surface until each one is ⅛ inch thick. Cut the biscuits into ½ inch strips.
Add the dumplings to the boiling soup mixture one at a time. Stir well to ensure they don’t stick.
Stir in the carrots and celery. Cover the soup and reduce the heat to low. Simmer for 15-20 minutes. Stir the soup occasionally to ensure the dumplings don’t stick.
Serve the soup in large soup bowls.
