I make this Easy Mushroom Gravy regularly to accompany pork, chicken or beef dishes! I love to pour generous helpings of this delicious gravy over meat or veggies like broccoli. If you don’t have chicken stock or broth, don’t worry, veggie or beef stock work also.
To make this gravy, I heat a large skillet over medium heat with olive oil. Sauté mushrooms until soft and golden. Remove from the pan and make a roux from butter and flour. Whisk in ½ a cup of stock and 1 cup milk. Stir until thickened. Return the mushrooms to the pan and season. Simmer until the gravy reaches the desired consistency. Remove from the heat and serve.
