To make the Plum Tart, you will need the following ingredients:
Preheat the oven to 375 °F.
If using halved plums, cut a ¾-inch slit through the top of each plum half, from the tip of the plum to right above where the pit should be, being careful not to cut it in half. This will help the juices to evaporate during the baking.
Place the fully baked tart shell on a baking sheet and spread 1 cup of crumbled vanilla cookies evenly over the bottom.
Beginning with the rim of the tart shell, arrange the plums on top skin-side down, tightly packed, in concentric circles. Try to stand up the plums slightly.
In a small bowl, mix together 3 tablespoons sugar and ½ teaspoon cinnamon.
Sprinkle 2 tablespoons cinnamon sugar over the plums.
Bake for 45 minutes or until the tips of the plums have colored, but the plums still retain their shape.
Remove from the oven and transfer to a wire rack to cool.
Once cooled, sprinkle the remaining cinnamon sugar over the plums or brush the plums with the heated apricot jam to glaze. Serve and enjoy!
