To make the Fluffy Matcha Lemon Muffins, you will need the following ingredients:
Preheat the oven to 375 °F and spray a 12-cup muffin pan with oil; set aside.
In a bowl, mix together 1¾ cups flour, 1 tablespoon baking powder, 1¼ tablespoon matcha powder, ½ teaspoon salt, and ¾ cup sugar.
In a medium bowl, whisk together ¾ cup unsweetened almond milk, 2 teaspoons vanilla extract, ¼ cup oil, 1 egg, ¼ cup lemon juice, and ½ tsp lemon zest.
