½ tsp Cinnamon ground
50g golden Caster sugar
1 Eggs
4 tbsp Milk
85g Butter melted
350g Cherries juicy, ripe
Icing sugar for dusting
For the topping:
25g Plain flour

25g golden Caster sugar
25g Butter at room temperature, diced

This Fresh Cherry Cake with a hint of Cinnamon is a beautiful and tasty cake to serve for any celebration. In fact, its my daughter’s request for her family birthday party, every year.

It’s a simple recipe to follow and my kids especially love helping to use their hands to make the crumble topping. Decorated with beautiful fresh seasonal cherries, it almost makes me wanting to go cherry picking right now, just to make this special cake!

Steps to make Fresh Cherry Cake with a Hint of Cinnamon

Preheat oven and prepare baking tin

Preheat the oven to 160 °C. Lightly grease and 20cm round baking cake tin, about 5cm deep.

Combine dry ingredients

In a bowl, mix the flour, cinnamon and caster sugar.

Add wet ingredients

Make a well in the center and add the egg, milk, melted butter and whisk with a wooden spoon or electric beater until mixture is thick and smooth.

Prepare cake

Pour the mixture, evenly, into the tin. Remove the stalks and stones from the cherries and scatter them over the top of the mixture. Gently press them into the batter.

Prepare topping

In a bowl, combine the flour, cinnamon, caster sugar and butter and using your fingers, rub the mix together to form a crumble-like mixture with pea-sized pieces. Sprinkle the crumble over the top of the cherries.

Bake

Bake for 30-35 minutes until a wooden skewer inserted into the center comes out clean.

Remove from the oven and leave in the baking tin until cool enough to touch. Remove the cake from the tin and allow to cool on a wire rack until completely cold, before slicing and serving.
