With summer in full swing, it’s the perfect time to make this Fresh Mint Gelato. With a cool mix of fresh mint and melted chocolate, it’s my husband’s favorite flavor. It’s so good, you’ll even want to eat it over some apple crumble in the winter.
Whatever your preference is, be sure not to leave the mint in for too long. Longer than five minutes can give the ice cream and overpowering flavor.
To make Fresh Mint Gelato, you will need the following ingredients:
In a large saucepan, stir the sugar and cornstarch together.
Add the cream and milk and cook together over a medium heat, stirring constantly for about 10 minutes, until the mixture thickens and starts to lightly bubble.
Once bubbling, remove the milk mixture from the heat and transfer the to a glass bowl and add the mint. Remove the mint after 5 minutes
Freeze the mixture in an ice cream maker according to the displayed instructions.
Melt the chocolate in the microwave or a double boiler and then cook until the chocolate is barely warm and still fluid.
Quickly drizzle the melted chocolate into the gelato while stirring vigorously. The chocolate should flake apart on top of the cold gelato, forming bits of chocolate throughout.
Place the bowl over a container of ice water to cool the mixture down quickly while stirring occasionally until cool, then cover the mint cream and refrigerate about 4 hours, or until completely cold.
