I love this Fruity Sponge Cake, especially as a baking option with the kids. Fun to decorate and looks so pretty that it really encourages eating more fruit – especially when it’s on cake! To make Fruity Sponge Cake, you will need the following ingredients:
Preheat the oven to 180 C/fan 160 C/gas 4 and grease and line the base and sides of two 20-cm cake tins with baking parchment paper.
In a mixing bowl, sieve 50 grams of flour, 3 tablespoons of cornstarch and 1 teaspoon of baking powder together and combine.
In a separate bowl, using an electric beater, whisk 4 egg whites until stiff.
Add 175 grams of caster sugar and beat into the egg whites a few times.
In a small bowl, quickly beat 4 egg yolks together then add them to the bowl of egg whites and whisk until combined.
Using a metal spoon, fold in dry ingredients until well combined.
Transfer the batter to the prepared tins and smooth over the top. Bake in the preheated oven for about 18-20 minutes until risen and light golden in color. Allow to cool for about 10 minutes before removing to cool completely.
In a mixing bowl, combine the fromage frais and the peach chunks together then smooth over the top of one cooled cake and sandwich the second piece over the filling.
Dust with sprinkles of powdered sugar and serve!
