This is such a great cookie recipe for a party – cute, colorful Funfetti Sugar Cookies! They are not crisp and crunchy, they are more like a chewy shortbread, speckled with rainbow sprinkles. They contain cream cheese and oil which help to keep the cookies soft for a few days.
Start by mixing the dry ingredients together. Make a paste from butter, sugar and cream cheese. Add oil, egg and vanilla and almond extracts before folding in colorful sprinkles. Shape into dough balls and coat them in sugar before baking. Enjoy!
To make Funfetti Sugar Cookies, you will need the following ingredients:
Preheat the oven to 350 °F and line a baking sheet with parchment paper.
Mix 2¼ cups of all-purpose flour with 1 teaspoon of baking powder, ½ a teaspoon of baking soda and ½ a teaspoon of kosher salt in a bowl.
In a large baking bowl, mix 1½ cups of granulated sugar with 6 tablespoons of melted unsalted butter and ¼ cup of cream cheese together until it is a paste.
Beat in ¼ cup of vegetable oil followed by a large egg, 2 teaspoons of vanilla extract and ¼ teaspoon of almond extract.
Add the dry ingredients to the cream cheese and sugar mixture. Stir until almost combined. Add ½ a cup of sprinkles and fold them in until evenly distributed.
Using a medium sized cookie scoop, create 1½ inch dough balls. Roll each dough ball in a small dish of granulated sugar until evenly coated.
Place the cookies on the baking sheet about 2 inches apart. Bake for 10-12 minutes until the tops are set and they are slightly golden around the edges.
Leave the cookies to cool on the baking sheet for about 10 minutes before transferring to wire racks to cool completely.
Repeat the cooking process with the remaining cookie dough.
