Ginger Sponge Cake is one of my favorite cakes to make. I love the flavor of ginger and I think it works so well in this sponge cake recipe. As you know, I’m not really into sweet things and baking. I much prefer savory meat dishes. But I firmly believe that everyone needs to have a couple of cake recipes in their repertoire and this is one of the ones in mine!
Another reason I love this cake is that it is so simple to make. Simply combine the dry ingredients in a large bowl. Rub in margarine with your fingertips. Add egg, golden syrup and hot water until you have a cake batter. Bake in the oven and enjoy!
To make Ginger Sponge Cake, you will need the following ingredients:
Preheat the oven to 350 °F. Grease and line a 11x7 inch baking pan.
Mix the flour, sugar, ginger and bicarbonate of soda together in a large bowl.
Rub margarine and flour mixture together with your fingertips until it resembles breadcrumbs.
Add the beaten egg, golden syrup and hot water and stir with a wooden spoon until the ingredients are fully combined
Pour the cake batter into the prepared baking pan and spread it out evenly.
Bake for 40 minutes until the cake is a light brown color on top.
Leave the ginger sponge cake to cool on a wire rack.
Cut into squares and serve.
