To make these berry breakfast tarts, start by preparing the dough. Divide the dough into two equal portions and roll each piece into a rectangle. Cut each rectangle into 6 squares. Place some jam on each square and fold the dough over the filling. Seal the edges with a fork and bake the tarts until golden brown. To make the Glazed Berry Breakfast Tarts, you will need the following ingredients:
Preheat the oven to 425 °F and line a large baking sheet with parchment paper.
In a food processor, pulse 3 cups all-purpose flour, ¼ cup granulated sugar, 4 teaspoons baking powder, ¾ teaspoon baking soda, and ½ teaspoon salt.
Add in 10 tablespoons butter and pulse until the mixture resembles coarse crumbs.
Transfer the mixture to a large bowl and stir in ¾ cup plus 2 tablespoons buttermilk until the dough comes together.
Transfer the dough to a lightly floured surface and divide into two equal portions.
Roll out one portion of dough to a rectangle about 15 inches by 10 inches and cut into 6 5-inch squares.
Spread a teaspoon of jam on half of each square, leaving an inch of space around the edges, and moisten the edges with water.
Fold the dough over the filling and seal the edges with a fork. Prick the tarts all over and arrange them on the baking sheet. Repeat with the remaining dough and jam.
Bake the tarts for 10 to 12 minutes or until golden brown. Once baked, transfer to a wire rack to cool.
In a medium bowl, stir together 1 cup confectioners' sugar, ½ teaspoon vanilla extract, 1 tablespoon plus 1 teaspoon milk, and red food coloring if using.
Once the pop tarts are cool, top with vanilla glaze and sprinkle with sugar if using. Set aside until the glaze sets.
