- 1 pound Goat meatbone-in, cut into large chunks
- ¼ cup Vinegar
- ¼ cup Soy sauce
- 4 Garlic clovecrushed
- 1 tbsp Vegetable oil

- 1 Red bell peppercut into 1-inch squares
- 1 cup Tomato sauce
- 2 cups Beef stock
- 1 Potatoespeeled and cut into large chunks
- 2 Carrotspeeled and cut into large chunks
- ½ cup Green peas
- ½ tsp Salt
- ¼ tsp Black pepper
- 1 pinch Cayenne pepper
Goat Stew (Caldereta)
This Goat Stew Is a recipe I learned from a Filipino friend of mine. It’s called caldereta. I had never cooked with goat until I tasted this dish and my mind was blown. This stew is full of flavor thanks to marinating the meat for at least 6 hours. The stew is cooked slowly, making it tender and delicious.
To make this start by mixing goat meat with vinegar soy sauce and garlic in a large bowl. Cover and place in the refrigerator for a minimum 1 hour. To get the best results marinate for at least 6 hours. When you are ready to cook the stew, remove the meat from the marinade and pat dry with paper towels. Set the marinade aside. Next, brown the meat and set aside. In the same pan, cook the onion, pepper and garlic. Add tomato sauce and the browned goat meat. Pour in the reserved marinade and the beef stock. Simmer until tender. Add potato, carrots and season. Simmer until the vegetables are cooked through.
