Gooseberry and Chamomile Jam that you just have to try! I love to make my own condiments and especially in berry season, you can always find jars of this tasteful jam around my kitchen.

I really enjoy this with a slice of buttered toast and this sweet and herbal jam spread over, coupled with a hot pot of English tea, my mornings already feel more peaceful just by describing it!

So, how to make Gooseberry and Chamomile Jam?

Steps to make Gooseberry and Chamomile Jam

Infuse chamomile water

In a glass bowl place 250ml boiling water and infuse the chamomile flowers inside for 5 minutes, to make tea.

Prepare gooseberries

Then strain and add to the gooseberries. Destem the gooseberries, top and tail and tip into a large preserving pan with lemon juice.

Cook gooseberries

Mix the gooseberries in the chamomile tea and over a medium heat, cook for 10 minutes, stirring so it doesn’t stick, until softened.

Prepare serving jars

Sterilize jam jars by washing in hot soapy water and then rinsing thoroughly. Allow to drip-dry before placing them in a warm oven at 120 °C/100 °C fan/gas 1 for at least 20 minutes.

Cook jam

Bring the gooseberry mix to a boil then add sugar and stir continuously until completely dissolved. Bring to a rapid boil, stirring occasionally as to not stick or burn the base of the pan, for 25-30 minutes.

Serve or store

Once ready, remove from the heat and skim off any excess. Ladle spoonfuls into the warm and dry, sterilized jars. Seal immediately and once cooled, your jam is ready to be enjoyed. Jam will keep if sealed for up to 1 year or once opened, keep refrigerated for up to 3 months.
