Ingredients

1 whole large Chicken cut into pieces , washed and patted dry with a paper towel
4-6 tbsp Olive oil
3 Onion chopped
4 cloves Garlic minced
Salt to taste
Black pepper to taste
1 Cinnamon stick whole
½ tsp Ground cloves
1 tsp Ground paprika
1 tsp Ground nutmeg
1 tsp Cumin ground
1 tsp Curry powder
6 pieces Allspice berries
1 28 oz can Can chopped tomatoes large
2-3 tbsp Tomato paste
1 tbsp Granulated sugar optional
½ cup Red wine optional
½ cup Chicken broth or water
2 Bay leaf
1 package Pasta bucatini
Cheese grated of choice for serving
Fresh herbs chopped, for garnish

These days, I am dreaming of vacations more than ever and this Greek Corfu Chicken and Bucatini helps somewhat with my wanderlust! This recipe is inspired by Mediterranean holidays in Italy and Greece. 

It’s super easy to make this dish too. You simply need the ingredients and some time. Start by browning chicken in a pan. Make the Greek inspired sauce using tomatoes, red wine and chicken broth with onions, garlic and spices. Return the chicken to the saucepan and simmer for around 40 minutes. Cook for the last 10 minutes with the lid off to reduce and thicken the sauce and cook your bucatini pasta in a separate saucepan.

Steps to make Greek Corfu Chicken and Bucatini

Brown chicken

Season the chicken pieces with salt and pepper. Heat 4-6 tablespoons of oil to medium-high in a large saucepan or Dutch oven. Brown the chicken pieces skin side down first and then all sides. Once browned, remove from the pan and set aside.

Sauté onion, garlic and spices

Reduce the heat to medium. Add 3 chopped onions and sauté until tender and translucent. Add 4 minced cloves of garlic and 1 cinnamon stick, ½ a teaspoon of ground clove and 1 teaspoon each of paprika, nutmeg, cumin, curry powder and 6 allspice berries. Cook the mixture for another minute until fragrant.

Add tomato paste and wine

Stir in 2-3 tablespoons of tomato paste. Cook for just 30 seconds before adding ½ a cup of wine. Cook for 1 minute.

Add tomatoes and broth

Pour in 1 large can of tomatoes and ½ a cup of chicken broth or water. Add 2 bay leaves and then carefully place the chicken back in the saucepan with the sauce coming at least halfway up the chicken.

Stir the contents of the saucepan and bring it to a boil. Once boiling, reduce the heat to medium-low. Cover the saucepan and allow it to simmer for 40 minutes, stirring occasionally.

Adjust seasoning

Remove the lid and taste for seasoning. Stir in sugar if using and allow sauce to simmer with the lid off for 10 more minutes until reduced and thickened.

Cook bucatini pasta

Follow the package directions to cook the bucatini pasta. Drain and toss with a drizzle of oil.

Serve

Serve immediately, garnished with grated cheese and some chopped fresh herbs.
