1 cup mashed ripe Bananas or unsweetened applesauce
ÂĽ cup Maple syrup or honey
½ tbsp Vanilla extract pure
2 cups Spinach loosely packed

These Green Oatmeal Spinach Waffles are a really healthy and delicious brunch recipe that the whole family will love. These waffles are my way of sneaking extra veggies into my children! They love that they are eating green waffles, and I love that they are eating spinach. Win-win!

These waffles are super simple to make too. Combine oats, salt, baking powder, and cinnamon in a blender and pulse until the oats resemble flour. Transfer to a medium bowl and set aside. Combine banana, eggs, oil, maple syrup/honey, spinach, and vanilla and blend until completely smooth. Return the oat mixture to the blender and process until fully combined, scraping the sides of the blender as you go. Heat the waffle maker and brush with a little oil to prevent sticking. Once hot, pour in some batter onto your hot waffle maker. Cook until golden and crispy. Enjoy warm or cool!

Steps to make Green Oatmeal Spinach Waffles

Blend dry ingredients

Place 2 ½ cups of oats, ¼ teaspoon of salt, 2 teaspoons of baking powder and 1 teaspoon of cinnamon in a blender. Pulse until the oats have a flour-like texture. Transfer to a medium bowl and set aside.

Combine wet ingredients

Combine 1 cup of mashed banana, 3 eggs, ¼ cup of oil, ¼ cup of maple syrup, 2 cups of spinach, and ½ a tablespoon of vanilla. Blend until the mixture is very smooth and the spinach is completely pureed.

Add oat mixture

Return the oat mixture to the blender and blend again until smooth, scraping down the sides of the blender as you go.

Heat waffle maker

Preheat waffle maker. Brush with a little oil as required.

Transfer mixture to waffle maker

Pour ½ a cup of the waffle mixture into the waffle maker and close it until the waffle is golden and crispy.

Keep warm

To keep the cooked waffles warm, place them in a preheated oven (200 ℉)

Serve

Once cooked, enjoy warm or cool.
