To make Healthy Vegan Banana Bread, you will need the following ingredients:
Preheat the oven to 360 °F and line a 9x5-inch loaf pan with baking parchment paper.
In a small bowl, whisk 2 tablespoons flax or chia meal with ⅓ cup lukewarm water. Set aside and allow to set for 10 minutes.
In a bowl, using a fork, mash 3 peeled bananas.
In a medium mixing bowl, using an electric mixer, beat the mashed bananas with ⅓ cup of unsweetened almond milk, ¼ cup of melted coconut oil and 2 teaspoons of lemon juice for 1 minute until a batter forms with no lumps.
In a different bowl, whisk 2 cups of oat flour, ½ cup of rolled oats, ⅓ cup of almond flour, 2 teaspoons of baking powder, ½ cup of coconut sugar and 1 tablespoon of cinnamon to combine.
Add dry ingredients to the bowl of banana batter along with the flax or chia egg and 1 teaspoon of vanilla extract. Using a spatula, combine all ingredients but don't over mix.
Fold in ⅓ cup of chopped walnuts if you wish.
Transfer the batter to the prepared loaf pan and top with slices of fresh banana, if you wish. Gently press them into the batter slightly.
Bake in the preheated oven for 50-60 minutes until a wooden toothpick inserted into the center comes out clean with a few crumbs.
Allow the banana loaf to cool in the pan for 10 minutes before removing and generously brushing with 2 tablespoons of maple syrup.
Cool for about 4 hours before slicing and serving.
