Bake our ultimate Irish Ginger Cookies because Christmas deserves only the best cookies! I’ve always been fond of Christmas baking, and I truly believe that no holiday serving platter would be complete without a batch of ginger cookies.

I love the deep ginger flavor of these soft in the middle but crunchy outside cookies. They are also loaded with cinnamon and cloves – our favorite seasonal spices. Finally, they are perfect for baking with your children and to give as a holiday food gift this winter. By the way, don’t forget to leave one for Santa!

Steps to make Irish Ginger Cookies

Preheat oven and prepare baking sheet

Heat the oven to 350 °F and line a baking sheet with parchment paper

Combine butter and sugar

Use a hand mixer to combine ¾ cup softened butter and 1 cup brown sugar until light and fluffy.

Add egg and salt

Add into the butter mixture 1 egg and ¼ teaspoon salt. Mix on low speed until combined.

Add dry ingredients

Add in 2 cups flour, ½ teaspoon baking soda, 1 teaspoon ground cloves, 2 teaspoons ground ginger, and 1 teaspoon ground cinnamon. Mix until just combined.

Shape cookies

Using a 1-tablespoon cookie scoop, scoop the batter into 24 even portions. Shape into balls and roll into confectioners’ sugar until coated all over. Place the balls on the prepared baking sheet spacing about 1½ inches apart.

Bake

Bake the cookies for 15 minutes.

Cool

Once baked, immediately transfer to a wire rack to cool.
