Everyone has a good stuffed chicken recipe but I really love this Italian Stuffed Chicken recipe. With bold ingredients of chopped olives and/or sundried tomatoes combined with crushed garlic, mixed herbs and soft cheese that gives a smooth and creamy texture.
Top with tomato slices for added flavor and color. This dish is also high in fats and protein and perfect for a keto lover.
To make Italian Stuffed Chicken, you will need the following ingredients:
Preheat the oven to 425 °F (220 °C/fan 200 °C/gas 7).
In a mixing bowl, mix 1 tablespoons of olives or sundried tomatoes, if using, along with 1 tablespoon of crushed garlic, ½ teaspoon of dried mixed herbs and 100 g of full-fat soft cheese until smooth and combined. Season with salt and pepper to taste.
Using a sharp knife, slice through the length of 2 chicken breasts without cutting all the way through to create a pocket.
Evenly stuff each chicken breast with about ¼ of the soft cheese mixture and gently press to close.
Transfer to a greased baking tray and season generously with salt and pepper. Add tomato slices, overlapping over the 4 stuffed chicken breasts. Season again and sprinkle a few mixed herbs. Finally, drizzle with olive oil.
Roast in the preheated oven for about 20 minutes until the chicken is golden and the tomatoes have roasted and shrivelled.
Serve hot with sides of your choice.
