This Jar Salad with Tortellini serves four people so you will need to ensure that you have four large mason jars (with lids!) before starting out. There is an art to assembling jar salads. My top tip is to place the dressing in the bottom of the jar so the other ingredients like lettuce don’t get soggy.
Start by cooking the tortellini according to the package directions. Once you have drained and cooled the tortellini under cold water, start assembling the salad. Begin with your favorite dressing at the bottom of the jar. Next add chopped cherry tomatoes and tortellini in that order. Add bell pepper, cheese and red onion in no particular order. Place lettuce on top and close the lid. Refrigerate until you are ready to eat.
To make my version of Jar Salad with Tortellini, you will need the following ingredients:
Cook the tortellini according to the package directions. Once cooked, drain and run the pasta under cold water to stop the cooking process.
Pour the vinaigrette dressing into the bottom of a mason jar. Add a layer of chopped cherry tomatoes and a layer of cooked, cooled tortellini.
Add layers of diced red onion, chopped bell pepper and feta cheese in whichever order you like. Finally add lettuce.
Seal the mason jars and place them in the refrigerator to chill until serving.
Shake the contents of the jar into a bowl when you are ready to eat. Season to taste.
