Recently, I was reading the Jack and the Beanstalk fairy tale to my youngest kid. The story of Jack and his magic beans got me thinking about the Kentucky Wonder Beans recipe that my grandma used to make with green beans straight from the garden. Isn’t it funny how something as simple as a fairy tale can transport you back to the tastes of the past? The Kentucky Wonder Bean is an heirloom pole bean plant which has a delicious flavor.

I get my beans at a local farmer’s market, but don’t worry if you can’t get your hands on the Kentucky variety – you can substitute with any green beans you can find. To make this recipe couldn’t be easier – you simply place all the ingredients in a saucepan and boil until the beans are tender. This is a great side dish for my Tomato Chicken Parmesan recipe.

Steps to make Kentucky Wonder Beans

Put some water in a saucepan

Pour a small amount of water (about 1 inch) in the bottom of a saucepan.

Add the green beans, bacon, garlic, olive oil, sea salt, and pepper to the saucepan and bring to a boil over high heat.

Cover and simmer

Once the water has come to a boil, turn the heat down to medium. Cover and cook for a further 7-10 minutes until the beans are tender.
