I’m not a huge baker or dessert maker and that’s why this Lemon Drizzle Cake is my favorite recipe choice for when I host a birthday party or need to deliver a cake dessert.

It’s a really simple recipe that serves a very impressive slice of cake, no one would know you’re not the greatest baker. A lemon, sugar cake base with a lemon and sugar drizzle frosting soaked through. Easy-Peasy-Lemon-Squeezy!

Preheat oven

Heat oven to 180 °C/fan or 160 °C/gas 4.

Beat the butter and sugar

In a bowl, beat the butter and sugar until pale and creamy.

Add eggs

Add 4 eggs, one at a time, slowly mixing to combine.

Add flour

Slowly sift the flour into the bowl and mix well.

Add lemon zest

Finely grate the zest from 1 lemon and stir until combined.

Prepare batter to bake

Grease an 8x12cm loaf tin and pour the batter evenly into the tin, smoothing over the top.

Bake cake

Bake in preheated oven for 40-45 minutes until a wooden toothpick inserted into the center of the cake comes out clean. Remove from oven and allow to cool in the tin.

Prepare drizzle

In a small bowl, mix the juice from 1½ lemon and caster sugar. Stir until a drizzle like texture forms.

Using a skewer or fork, prick holes all over the cake and pour the drizzle over, letting the juice sink in and the sugar harden, for a crisp topping.

Leave the cake in the tin until completely cool before slicing and serving.
