To make Lemon Glazed Persimmon Bar, you will need the following ingredients:
Preheat oven to 350 °F and grease and flour a 10x15x1-inch jelly roll pan; set aside.
In a bowl, combine flour, cinnamon, nutmeg, salt and cloves. Set aside.
In a third, large bowl, whisk sugar, dates, oil and eggs until combined.
In a separate bowl, whisk persimmon pulp, 1½ tablespoon lemon juice and baking soda until combined.
Pour all ingredients together into one bowl and stir until just combined. Transfer to a prepared pan and smooth over the top.
Bake in preheated oven for about 25 minutes until lightly browned.
In a small mixing bowl, whisk remaining lemon juice and confectioners sugar, together, until smooth.
Remove sheet from the oven and cool for about 5 minutes before pouring prepared glaze over warm cookie sheet. Use a rubber spatula to spread over the top, evenly.
Let glaze set and harden before cutting into finger-sized bars and serving.
