Lentil Nuggets are like my fast food! They are really tasty and very versatile too – I can add them as a filling to wraps or sandwiches. I can serve them alongside a green salad if I am being healthy or I can make a batch and use them as snacks or finger food. A less healthy, but still delicious option is to pan fry each nugget in a small drop of oil over medium-high heat until both sides are golden brown.
To make these, I start by soaking the lentils for a few hours. Then I blend lentils, carrot, corn, peas, vegan cheese, oregano, salt, pepper, red pepper flakes, and garlic in a food processor. I shape the nuggets with my hands and bake them in the oven. Simple!
To make this Lentil Nuggets, you will need the following ingredients:
Soak the lentils for 3 hours in cold water.
Preheat the oven to 400 ºF and line a baking sheet with parchment paper.
Place the soaked lentils, carrot, corn, peas, vegan cheese, oregano, salt, pepper, red pepper flakes, and garlic in a food processor and pulse until fully combined.
Take a tablespoonful of the lentil mixture and form a nugget shape using your hands. Place the nugget on the baking sheet and repeat until all the mixture is used up.
Bake in the oven for about 20 minutes until the nuggets are golden brown all over. Flip once halfway through cooking.
Serve these nuggets with a fresh green side salad.
