Mexican Brownies
These Mexican Brownies are the perfect treat for your Cinco de Mayo festivities this year. I associate these brownies with Mexico because I add cinnamon and cayenne to the mixture for a hint of warmth and a spicy kick.
To make these spicy brownies, start by combining flour, cocoa powder, salt, cinnamon, and cayenne pepper to a large bowl. Add butter and chopped chocolate to a small saucepan and stir continuously until the mixture is completely melted. Remove from the heat and mix in granulated sugar, and vanilla extract. Add the eggs and egg yolk and stir until well combined. Transfer the wet ingredients into the dry mixture and fold together. Do not overmix. Transfer the batter to a prepared baking pan and bake until the center is firm and a toothpick inserted into the center comes out mostly clean. When the brownies are completely cooled, transfer to a cutting board and slice into squares.
