These Mexican Brownies are the perfect treat for your Cinco de Mayo festivities this year. I associate these brownies with Mexico because I add cinnamon and cayenne to the mixture for a hint of warmth and a spicy kick.

To make these spicy brownies, start by combining flour, cocoa powder, salt, cinnamon, and cayenne pepper to a large bowl. Add butter and chopped chocolate to a small saucepan and stir continuously until the mixture is completely melted. Remove from the heat and mix in granulated sugar, and vanilla extract. Add the eggs and egg yolk and stir until well combined. Transfer the wet ingredients into the dry mixture and fold together. Do not overmix. Transfer the batter to a prepared baking pan and bake until the center is firm and a toothpick inserted into the center comes out mostly clean. When the brownies are completely cooled, transfer to a cutting board and slice into squares.

Heat oven and prepare pan

Preheat the oven to 350 °F. Line an 8x8-inch square baking pan with parchment paper and spray with cooking spray.

Combine dry ingredients

Mix ½ a cup of all-purpose flour with ⅓ cup of unsweetened cocoa powder, ½ a teaspoon of salt, ½ a teaspoon of ground cinnamon, and ¼ teaspoon of cayenne pepper in a large bowl. Whisk to combine.

Melt butter and chocolate

Place a small saucepan over medium-low heat. Add ½ a cup of unsalted butter and 1 cup of chocolate. Stir continuously until the mixture is completely melted and smooth.

Add sugar and vanilla

Remove the saucepan from the heat. Add 1 cup of granulated sugar, and 1 teaspoon of vanilla extract and stir until fully combined.

Whisk in eggs

Add the 2 eggs and an egg yolk and mix until well combined.

Combine wet and dry ingredients

Transfer the wet ingredients into the dry mixture. Fold the wet and dry ingredients together using a rubber spatula or wooden spoon until just combined.

Transfer the batter to baking pan

Transfer the batter to the prepared baking pan.

Bake in the preheated oven for 32-36 minutes until a toothpick inserted in the center comes out mostly clean.

Leave to cool

Leave the brownies to cool completely before removing from the pan and cutting into squares.
