I love this recipe for Microwave Eggless Fruit Custard – it is a perfect dessert to make for my kids as one of them has an egg allergy so it can be difficult to find a recipe that suits everyone! 

To make this delicious custard, start by heating milk in the microwave. I usually use reduced-fat milk but any milk is fine. Next I add saffron strands, sugar, and custard powder and heat in the microwave until it starts to thicken. Remove the mixture from the microwave and leave to cool. To serve, I usually add a selection of my favorite chopped seasonal fruits and drizzle some rose syrup over the top.

Steps to make Microwave Eggless Fruit Custard

Heat milk

Place 3 cups of milk in a microwave-safe bowl and heat for 4-5 minutes. Stir every 2 minutes to ensure the milk doesn’t overflow.

Add saffron, sugar and custard powder

Take ¼ cup of the hot milk and ⅛ teaspoon of saffron strands, 3 tablespoons of sugar, and 4 tablespoons of custard powder. Combine using a hand whisk until there aren’t any lumps remaining. Return the mixture to the remaining milk.

Heat mixture

Heat the mixture in the microwave for 1½ - 2 minutes.

Cool to room temperature

Let the custard cool for 10 minutes until it reaches your desired consistency. If it is too thin, return to the microwave for 1-2 minutes. Let the custard sauce cool down to room temperature.

Chop fruit and add to custard

As the custard cools, chop a selection of banana, apple, and grapes. Add to the room temperature custard sauce and mix to incorporate.

Chill

Place in the refrigerator to chill.

Serve

Serve drizzled with rose syrup and garnished with pomegranate arils.
