Microwave Eggless Fruit Custard

I love this recipe for Microwave Eggless Fruit Custard – it is a perfect dessert to make for my kids as one of them has an egg allergy so it can be difficult to find a recipe that suits everyone! 

To make this delicious custard, start by heating milk in the microwave. I usually use reduced-fat milk but any milk is fine. Next I add saffron strands, sugar, and custard powder and heat in the microwave until it starts to thicken. Remove the mixture from the microwave and leave to cool. To serve, I usually add a selection of my favorite chopped seasonal fruits and drizzle some rose syrup over the top.

    Heat milk

    Place 3 cups of milk in a microwave-safe bowl and heat for 4-5 minutes. Stir every 2 minutes to ensure the milk doesn’t overflow.

    Add saffron, sugar and custard powder

    Take ¼ cup of the hot milk and ⅛ teaspoon of saffron strands, 3 tablespoons of sugar, and 4 tablespoons of custard powder. Combine using a hand whisk until there aren’t any lumps remaining. Return the mixture to the remaining milk.
