100 g Millet or about ½ cup
100 g ground raw Almonds or about 1 cup
40 g Pistachio nuts chopped or about ⅓ cup
½ tsp Cardamon
1 pinch Baking soda
1 pinch Sea salt
½ Lemon zested
3 tbsp Coconut oil melted
3 tbsp Maple syrup
1 tsp Vanilla extract
1 tsp Lemon juice

Celebrate family time with these Millet, Almond and Pistachio Cookies that are gluten free and vegan made from blended raw millet, ground almonds and chopped pistachios. There is a subtle hint of sea salt, cardamom, lemon, coconut, sweet maple and vanilla all coming together for a wonderful flavored cookie. They’re delicious and healthy which is always my thing!

To make Millet, Almond and Pistachio Cookies, you will need the following ingredients:

Steps to make Millet, Almond and Pistachio Cookies

Preheat oven and prepare baking sheet

Preheat the oven to 355 °F and line a baking sheet with baking parchment paper.

Blend millet

Using a high speed blender or coffee grinder, pulse ½ cup of millet until mixture resembles a flour-like texture.

Combine dry ingredients

In a large mixing bowl, combine millet flour, 1 cup of ground almonds, ½ teaspoon of cardamom and a pinch of baking soda and salt each, then stir in ⅓ cup of chopped pistachios and the zest from ½ a lemon.

Combine wet ingredients

In a separate bowl, whisk 3 tablespoons of melted coconut oil, 3 tablespoons of maple syrup, 1 teaspoon of vanilla extract and 1 teaspoon of lemon juice until well combined.

Combine all ingredients

Pour the wet ingredients over the dry ingredients and mix until well combined and dough is formed. If the dough feels too dry, add some more coconut oil. Set aside for 10 minutes.

Prepare cookies

Once rested, use your hands to roll 16 small balls and then arrange evenly on the prepared baking sheet. Gently flatten each ball with a spoon or palm of a hand.

Bake

Bake in the preheated oven for about 15 minutes until the cookies are light golden brown.

Cool and serve!
