Recipe Description

Mini Apple Pies are one of my favorite mini desserts! They are easy to make and taste delicious thanks to being filled with a simple homemade apple pie filling. I use homemade pie crusts when I make these mini pies.

To make these, start by cutting pastry circles and pressing them into a muffin pan. Chill in the refrigerator with the leftover pastry scraps. Make apple filling. Fill each pastry cup with 2-3 tablespoons of apple filling and make lids from the leftover pastry scraps. Bake in the oven until light golden brown. Serve with ice cream or custard.

Steps to make

    Heat oven

    Preheat the oven to 425 °F.

    Roll out pastry and cut

    On a lightly floured surface, roll each of the pie crusts out to ⅛-inch thickness. Cut out 12 circles from the pie crusts using a 3 ½-inch cookie cutter. Re-roll and re-use scrap pieces of pie dough to make more circles.

    Line muffin pan with pastry circles

    Place each circle in a cup of a 12-count muffin pan. Press the dough down gently in the muffin cup. Make sure the dough fits into the muffin cup and around the sides. Transfer the pan and the leftover pie crust dough to the refrigerator to chill.

    Make apple filling

    Combine 2 ½ cups of chopped apples with ¼ cup of granulated sugar, 2 tablespoons of all-purpose flour, 1 teaspoon of ground cinnamon, 1 teaspoon of pure vanilla extract and ⅛ teaspoon of ground nutmeg in a large bowl. Mix well until fully combined.

    Remove pastry from refrigerator

    Remove the chilled pastry in the muffin pan from the refrigerator.

    Fill pastry

    Divide the apple pie filling between the pastry circles (approx 2-3 tablespoons per mini pie).

    Remove the leftover pie dough from the refrigerator. Cut out cute designs for the tops of the pies - I like stars! Place the lids on top of each pie.

    Bake

    Bake in the preheated oven for 20-25 minutes until the crust is lightly golden brown and the apple filling is bubbling.

    Remove from the oven and leave to cool for 10-15 minutes in the pan before transferring carefully to a wire rack to cool.

    Serve slightly warm with a cup of strong coffee.
