Preheat oven and prepare muffin trays

Preheat oven to 350 °F and line miniature muffin trays with paper liners.

Prepare base

Crush about 1 package (12 ounce) of vanilla wafers and portion about ½ teaspoon in the bottom of each paper liner.

Prepare cheesecake filling

In a mixing bowl, beat 2 packages (8 ounce) cream cheese with ¾ cup white sugar, 2 eggs and 1 teaspoon vanilla extract until well combined, light and fluffy.

Prepare mini cakes

Top each wafer base with the prepare cheesecake filling to the top.

Bake

Bake in preheated oven for 15 minutes.

Allow to cool before topping with a teaspoon dollop of cherry pie filling.

So my boyfriend made me this but swapped a few things out, instead of cherry he used blueberry ( My personal favorite) and he used a small heart container instead of making it into little muffin containers. It tasted AMAZING! Though it took a while for it to cool down I'd totally recommend it.
