Imagine preparing dessert for 48 people in 45 minutes like you can with these Mini Cherry Cheesecakes. The base is made from sweet vanilla wafers that are crushed and placed inside mini cupcake paper liners and topped with a creamy vanilla, creamy cheesecake that gets baked in the oven for just 15 minutes. They’ll turn out perfect and just need a simple dollop of cherry pie filling to finish it off.

Steps to make Mini Cherry Cheesecakes

Preheat oven and prepare muffin trays

Preheat oven to 350 °F and line miniature muffin trays with paper liners.

Prepare base

Crush about 1 package (12 ounce) of vanilla wafers and portion about ½ teaspoon in the bottom of each paper liner.

Prepare cheesecake filling

In a mixing bowl, beat 2 packages (8 ounce) cream cheese with ¾ cup white sugar, 2 eggs and 1 teaspoon vanilla extract until well combined, light and fluffy.

Prepare mini cakes

Top each wafer base with the prepare cheesecake filling to the top.

Bake

Bake in preheated oven for 15 minutes.

Allow to cool before topping with a teaspoon dollop of cherry pie filling.

I used brown sugar instead of white but it was sooo tasty nonetheless going to be making this so much this year.

So my boyfriend made me this but swapped a few things out, instead of cherry he used blueberry ( My personal favorite) and he used a small heart container instead of making it into little muffin containers. It tasted AMAZING! Though it took a while for it to cool down I'd totally recommend it.
