Start this mug burrito by pressing a fresh tortilla into a mug. Don’t worry – it will fit and fold into the shape of the mug. Add two eggs and carefully whisk it using a fork. Try not to tear the tortilla as you whisk. Add your favorite burrito fillings – I like beans, cheese and scallions. Season and cook in the microwave. Check on your burrito as you cook – if the eggs get too hot, they might explode! Once cooked, garnish salsa and sour cream. Enjoy!
To make Mugrito: Breakfast Burrito in a Mug, you will need the following ingredients:
Push 1 large tortilla into a microwave safe mug.
Break in two eggs and whisk them carefully with a fork. Take care that you don’t tear the tortilla.
Add 2 tablespoons each of beans, Cheddar cheese and scallions. Season to taste with salt and pepper and mix well.
Cook in the microwave for 1 minute 20 seconds. Remove from the microwave and check. If the eggs are still liquid, cook for 15-20 seconds more.
Leave to cool for about three minutes.
Serve garnished with sour cream and salsa.
