My Favorite Gingerbread Cookies are easy and fun to make. I love to make a double batch of these and get my kids to decorate them. And they love to bring them to school on the last day before holidays to share with their teachers and friends.
This is an unusual cookie recipe because the cookie dough needs time to chill. You must chill the dough for at least 3 hours but you can leave it chilling for up to 3 days which means it’s a great cookie dough to make in advance.
To make My Favorite Gingerbread Cookies, you will need the following ingredients:
Beat the butter in the bowl of a stand mixer with the paddle attachment for about 1 minute until it is creamy and smooth. Add the brown sugar and molasses. Mix at medium high speed until it is creamy looking and fully combined.
Add the egg and vanilla and mix on high speed for 2 full minutes. Scrape the sides and bottom of the bowl with a spatula or knife as required.
Mix the flour, baking soda, salt, ginger, cinnamon, allspice, and cloves together in a separate bowl until combined.
On low speed, mix the wet and dry ingredients together.
Divide the thick sticky dough in two. Place each half onto a large piece of plastic wrap. Wrap tightly and press down to create a disc shape. Refrigerate for a minimum of 3 hours.
Preheat the oven to 350°F. Line 2-3 large baking sheets with non-stick baking paper.
Roll one of the dough discs out on a large well-floured surface to ¼ inch thickness. Cut out gingerbread man shapes. Place the shapes 1 inch apart on the prepared baking sheets. Roll out all dough scraps until all the dough is used. Repeat with second disc of dough.
Bake the cookies for 9-10 minutes. Remove from the oven and allow to cool for 5 minutes on the cookie sheet. Transfer the cookies to a wire rack and leave to cool completely.
Once completely cool, decorate the cookies with royal icing or easy cookie icing.
Allow the icing to set, then serve with glasses of milk!
