This One Bowl Greek Yogurt Pumpkin Bread recipe is a my go-to recipe for Fall. For years, I never really got the pumpkin craze because I lived in a warm place. Since moving to a colder climate, I get it!!! And I love the flavors of cinnamon and nutmeg on a chilly day!

This bread couldn’t be easier to make. It only takes 10 minutes to prep and all in the same bowl too so there is less mess to clean up at the end. I start by beating the eggs and adding pumpkin, yogurt, sugar, vanilla, spices, baking soda, and salt. Then I mix in the flour and chocolate chips before transferring the mixture to a baking pan and cooking. Delicious!

Heat the oven and prepare a tin

Preheat the oven to 350 °F. Lightly grease a loaf tin.

Beat the eggs

In a large bowl, lightly beat the eggs until the yolks and white just start to mix.

Mix in the pumpkin, yogurt, sugar, vanilla, spices, baking soda and salt

Fold in the chocolate chips

Put the batter in the loaf tin. Sprinkle some remaining chocolate chips on top. Bake for 45-50 minutes until the loaf has risen and is golden on top. When it is cooked an inserted toothpick should come out clean.

Allow the cake to cool in the pan for 10 minutes and then transfer it to a wire rack to cool completely.

Serve

Serve with a cup of pumpkin spiced latte.
