1 Onion small, diced
3 cloves Garlic minced
1 cup Pumpkin puree not pumpkin pie filling
4 cups Vegetable broth
¼ tsp Red pepper
¼ tsp Salt ground

â…› tsp Ground nutmeg
2 tbsp Butter
4 oz Cream Cheese room temperature and cut into cubes
Parsley fresh, chopped, for garnish

My kids adore this One Pot Cheesy Pumpkin Pasta and it will come as no surprise that I love it too because it is super quick to prepare, it all cooks in the one pan so there is very little wash up to do. And I love it because it tastes delicious and feeds a crowd too. Win-win-win!

Start by placing pasta, onion, garlic, vegetable broth, pumpkin puree, red pepper flakes, salt, pepper, and nutmeg in a large pot. You can use elbows, farfalle, or penne – whatever takes your fancy! Stir the ingredients to combine and place the pot on the stove over medium/high heat. Bring the mixture to a boil. Cover and reduce the heat. Simmer until the pasta is al dente. Stir in butter and cream cheese cubes and stir continuously until the cheese is fully incorporated. Season to taste. Garnish with freshly chopped parsley.

Place ingredients in large pot

Add the pasta, onion, garlic, vegetable broth, pumpkin puree, red pepper flakes, salt, pepper, and nutmeg to a large pot. Stir to combine.

Bring to boil

Place the pot on the stove over medium-high heat and bring to a boil.

Cover and simmer

Place a lid on the pot and turn the heat down. Leave to simmer for 10 minutes before uncovering, stirring, covering and simmering for 2-4 more minutes until the pasta is al dente.

Add butter and cream cheese

Add cubes of butter and cream cheese. Stir until the cheese melts and is fully incorporated.

Garnish with parsley and serve immediately.
