2 medium Zucchini cut into 1/2"-thick slices
1 cup smoked Mozzarella grated, + more for serving
1 small Onion thinly sliced
2 tbsp Butter unsalted
1 tbsp Olive oil extra-virgin
Kosher Salt to taste
Black pepper to taste, freshly ground
1/4 cup fresh Basil torn + more for serving

You can meal prep for the week using your favorite pasta with colorful, small bell peppers, sautéed with zucchini slices and topped with grated, Smoked Mozzarella and fresh torn basil leaves. Cook peppers and onions

In a large skillet over medium-high heat, melt the butter and oil and add the peppers and onions. Season with salt and pepper to taste and cook, stirring continuously for 10-12 minutes until softened.

Add zucchini

Add the zucchini and continue cooking for 4-6 minutes until the peppers are soft and tender and zucchini are tender with a crunch.

Cook pasta

In a large saucepan, cook the pasta according to the package instructions. Once cooked, drain and reserve 1 cup of the cooking water.

Add pasta to vegetables

Add the pasta, 1 cup smoked mozzarella, ¼ cup basil and ½ cup pasta cooking water to the skillet of cooked vegetables and toss to coat. Add more pasta cooking water as needed to create a sauce.

Serve

Season with salt and pepper to taste and top with sprinkles of mozzarella and fresh basil for garnishing, before serving.
