¼ cup Cooking oil

2 Large eggs
½ tsp Vanilla extract
1 tsp Lemon zest
1¼ cups All-purpose flour
1¼ tsp Baking powder

¼ tsp Salt
2 Pears medium pears, very ripe, peeled, cored, thinly sliced
1 tsp Cinnamon powder
Powdered sugar for serving

You deserve another perfect tea time treat and this Pear Yogurt Cake serves right up. Using very little flour considering this is a cake, and Greek or plain yogurt, our recipe turns out moist and dense and packed with pear slices.

I add vanilla extract, lemon zest and cinnamon sprinkles to enhance the flavors of the pear fruits. Baked until golden on top and soft in the center. Serve yours with swirls of fresh cream or ice cream on a hot afternoon! Don’t miss this one!

Steps to make Pear Yogurt Cake

Preheat oven and prepare baking pan

Preheat the oven to 350 °F and line an 8-inch cake pan with some baking parchment paper then generously grease and flour all over.

Combine wet ingredients

In a large mixing bowl, combine ¾ cup of yogurt, ¼ cup of oil, ⅔ cup of sugar, 2 large eggs, ½ teaspoon of vanilla extract, and 1 teaspoon of lemon zest until smooth.

Combine dry ingredients

In a separate bowl, sift 1¼ cups of flour, 1¼ teaspoon of baking powder, ¼ teaspoon of baking soda and ¼ teaspoon of salt until well combined.

Prepare batter

Pour the wet ingredients into the bowl of dry ingredients and mix until fully combined and smooth. Transfer to the prepared baking pan and smooth over the top.

Add pear slices

Decorate the top of the cake with thinly sliced pears and sprinkle with about 1 teaspoon of cinnamon powder on top.

Bake in the preheated oven for about 40-45 minutes until golden on top and a wooden toothpick inserted into the center comes out clean.

Allow to cool for about 10 minutes on a wire rack before dusting with some powdered sugar. Cut, serve and enjoy!
