This Perfect Scrambled Cheesy Eggs recipe is one of my favorite brunch recipes. These eggs are tasty, filling, and the ultimate comfort food. They will go down a treat if you are cooking breakfast for a crowd.

The secret to these eggs is time – the slower they cook, the silkier they will be. Start by melting butter in a frying pan. Transfer eggs to the pan and leave to set on the bottom. When the eggs have lightly set, use a whisk to gently move the eggs around, then allow them to sit for just a few seconds between beating them again. Curds will begin to form and increase throughout the cooking time. Repeat this process of whisking, then resting the eggs for a few seconds until about half of the eggs are set, and the rest are still wet. Add cheese and serve warm.
