The secret to these eggs is time – the slower they cook, the silkier they will be. Start by melting butter in a frying pan. Transfer eggs to the pan and leave to set on the bottom. When the eggs have lightly set, use a whisk to gently move the eggs around, then allow them to sit for just a few seconds between beating them again. Curds will begin to form and increase throughout the cooking time. Repeat this process of whisking, then resting the eggs for a few seconds until about half of the eggs are set, and the rest are still wet. Add cheese and serve warm.
To make Perfect Scrambled Cheesy Eggs, you will need the following ingredients:
Melt 3 tablespoons of butter over medium-low heat in a large nonstick pan with sloped sides. Take care to not brown the butter. If the butter begins bubbling, reduce the heat to cook the eggs properly.
Whisk together 12 eggs with 1 teaspoon of cold water. Whisk until frothy and smooth.
Swirl the pan around to ensure the butter coats the bottom of the pan and up the sides. Transfer the eggs into the pan and let the mixture sit for a few seconds.
Let the mixture set slightly. Beat with a whisk and repeat until most of the eggs are set. Sprinkle with salt and pepper and add ¾ cup of cheese. Whisk until the eggs are scrambled.
