Plum Cobbler tends to make a weekly appearance on my dinner table when the plums have ripened. My neighbor has a plum tree at the edge of their lawn and some of the branches reach over into our yard so for a few weeks each year, we have a supply of sweet, fresh plums.
It is so easy to make this cobbler. Simply combine the plums with the sugar, tapioca, orange zest, and cinnamon. If you prefer your desserts more tart, you can reduce the amount of sugar you use to ½ cup. Place the filling at the bottom of an ovenproof dish. Then make a batter with flour, baking powder, sugar and salt. Drop the batter on top of the fruit filling and bake in the oven. Simple!
To make Plum Cobbler, you will need the following ingredients:
Preheat oven to 350 °F.
Mix the plums with ¾ cup white sugar, instant tapioca, orange zest, and cinnamon in a large bowl.
Place the fruit filling in the bottom of an ovenproof baking dish.
Mix 2 tablespoons of sugar, flour, baking powder and salt in a separate bowl. Cut in the butter (using a fork, pastry blender, or your hands) until the mixture resembles coarse breadcrumbs. Pour in the milk and egg until the batter is just moist. Do not overmix.
Drop large spoonfuls of batter onto the fruit filling.
Bake for about 35 minutes until the top of the cobbler is golden brown and the fruit filling is bubbling.
Serve warm with a spoon of whipped cream or ice cream on top.
