A deliciously, moist Plum Pound Cake recipe that is simple and tasty. Start out by preparing an easy vanilla batter with ripe plum wedges in between layers and sprinkled with cinnamon, brown sugar and ground Chinese 5 spice, that gives this cake the perfect kick to wake up your afternoon senses.
Pair it with a lovely cup of jasmine or herbal tea of your choice.
To make Plum Pound Cake, you will need the following ingredients:
Preheat the oven to 150 °C fan bake and grease a 25cm x 13cm and 7½ cm deep loaf tin and line with parchment paper over.
In a small bowl, stir the sugar, cinnamon and 5 spice together then set aside.
In a mixing bowl, beat the butter, sugar and vanilla extract together until pale and fluffy.
Gradually beat in the eggs, one at a time with a tablespoon of flour, if they start to curdle.
In a separate bowl, mix the flour, salt and baking powder together.
Mix the wet ingredients with dry ingredients until combined, being careful to not over mix.
Pour half the batter into the base of the cake tin, evenly and scatter half of the plums wedges on top. Sprinkle with sugar mix on top to coat and repeat with remaining ingredients to make a second layer, batter, plums and sugar mix.
Bake in preheated oven for about 1 hour 10 minutes until a wooden toothpick inserted into the centre comes out clean. Cover the top loosely with foil if getting too brown.
Allow cake to cool completely before removing from the tin.
Combine ½ cup icing sugar and enough lemon juice to form a smooth glaze. Dust with icing sugar or drizzle with lemon juice glaze
