This Plum Strudel With Cinnamon Streusel is a really great baked plum recipe which combines super thin dough with plums and a cinnamon almond streusel. There is a bit of prep and resting time in this recipe, but I guarantee it is worth it.
Start this strudel by making a dough using flour, oil and water. Leave the dough to rise in a bowl and prepare plums by halving them and removing the stones. Make streusel filling by mixing flour, almonds, sugar, butter, and cinnamon and chilling until you are ready to use. Stretch out the dough until see through. Place the plum and streusel filling on the dough and roll it up. Place on a baking sheet and bake in the oven until golden brown. Serve dusted with confectioners’ sugar.
To make Plum Strudel With Cinnamon Streusel, you will need the following ingredients:
Place 80 grams of warm water, 15 grams of canola oil, ½ a teaspoon of vinegar, a large pinch of salt, 145 grams of bread flour or high-gluten flour in the bowl of a stand mixer with the dough hook attached. Mix for 10 minutes until the dough is sticky and shiny.
Brush a separate bowl, with a teaspoon of oil. Place the dough in the bowl. Cover and leave to rest for about half an hour.
Slice 800 grams of plums in half and remove the stones.
Mix 75 grams of all-purpose flour, 50 grams of ground almonds, 60 grams of brown sugar, 60 grams of butter and 1½ teaspoons of cinnamon to make the streusel crumbs. Place in the refrigerator to chill until needed.
Preheat the oven to 355 °F. Line a baking sheet with parchment paper.
Start by rolling out the dough on a floured tea towel with a floured rolling pin. Once you have rolled out a rectangle, stretch the dough using floured hands. It should be thin enough to see the tea towel below. The dough should be approximately the size of the tea towel, trim off any edges that are still too thick.
Scatter the streusel and plums evenly over the dough and fill about ¾ of the rectangle leaving about 1 inch around the edges.
Fold the edges of the dough in on top of the filling and start rolling up the strudel using the tea towel below.
Place the rolled strudel on the prepared baking sheet. Brush with some melted butter and bake in the oven for about 35-40 minutes until golden. Brush with melted butter at least twice during baking.
Serve warm or cold, sprinkled with confectioners' sugar.
