This Potato Chip Chicken is my family’s favorite version of chicken schnitzel. Chicken schnitzel is always a safe dinner option because I know it’s a meal that everyone loves, especially when we have play dates over, after school.
Once the chicken breasts have marinated overnight, the other preparation time is very quick, with the rest of the time baking in the oven. This allows you to be hands-on with the kids, as you like, in the afternoon. You can serve this Potato Chip Chicken with a side of your choice, some ketchup and voila! Happy children, everywhere!
To make Potato Chip Chicken, you will need the following ingredients:
In a nonporous glass dish or bowl, drizzle melted butter over the chicken and season with salt and black pepper. Cover dish and refrigerate overnight.
Preheat an oven to 375°F.
Put potato chip crumbs in a shallow dish or bowl and roll the marinated chicken, until well coated.
Place the coated chicken in a lightly greased 9x13-inch baking dish. Bake in the preheated oven for 40 minutes, or until the chicken juices run clear.
Remove from the oven and serve with side of your choice. My kids loved these schnitzels with smashed potatoes!
