The batter for these chocolate chip pumpkin muffins is made simply with flour, spices, baking soda and baking powder, granulated sugar, eggs, milk, vegetable oil, plenty of pumpkin purée and chocolate chips, and a pinch of salt. Start with the dry ingredients. Then whisk together the wet ones in a separate bowl. Next, mix together the dry ingredients and wet ingredients and fold in the chocolate chips. Don’t overmix the ingredients. Bake for about 20-25 minutes until the skewer inserted in the center comes out clean. Cool slightly in the pan, then remove and serve right away. Enjoy!
To make these Pumpkin Chocolate Chip Muffins, you will need the following ingredients:
Preheat the oven to 350 °F and grease a 12-cup muffin pan.
In a large bowl, whisk together 1 ¾ cups all-purpose flour, 1 ½ teaspoons pumpkin pie spice, 1 teaspoon cinnamon, ½ teaspoon baking soda, 1 teaspoon baking powder, and ¼ teaspoon salt.
In a separate bowl, whisk together 1 cup granulated sugar, 2 large eggs, ½ cup vegetable oil, 1 ¼ cups pumpkin puree, 1 ½ teaspoons pure vanilla extract, and ¼ cup milk until combined.
Pour the wet ingredients over the dry ingredients and stir until almost combined.
Stir in 1 cup of chocolate chips. Don’t overmix.
Divide the batter evenly between the muffin cups and sprinkle the remaining ¼ cup chocolate chips over the top.
Bake for 20 to 25 minutes or until a skewer inserted in the center comes out clean. Remove the pan from the oven and place it on a wire rack to cool for 10 minutes. Then remove the muffins from the pan.
