To make Pumpkin Coffee Cake, you will need the following ingredients:
In a large bowl, beat the cake mix, canned pumpkin, water, eggs, pumpkin pie spice and baking soda on a low speed for 30 seconds, then increase to medium speed for 2 minutes.
Divide half the pumpkin batter into a pre-greased 9-inch square baking tin.
In a small mixing bowl, combine the chopped walnuts, sugar, flour and melted butter together.
Sprinkle half of the topping over the batter and then layer the remaining batter over that. Finally, top the cake with sprinkles of the remaining topping, filling the baking tin to the top.
Bake in the oven at 350 °F for 35-40 minutes until a wooden toothpick inserted into the center comes out clean.
Cool on a wire rack before serving.
