1 tbsp Pumpkin pie spice
1 tsp Baking soda
½ tsp Salt
15 oz Canned pumpkin puree
1 cup Granulated sugar
½ cup Brown sugar packed
2 Large eggs
½ cup Vegetable oil
1 tbsp Vanilla extract

8 oz Cream Cheese
¼ cup Granulated sugar
1 Egg yolks large
2 tsp Vanilla extract

They taste great served at room temperature or even slightly chilled! You can store them for a few days in an airtight container in the fridge which means they are a great after school treat.

Start by making the muffins with flour, pumpkin spice, pumpkin, sugar, eggs, oil and vanilla extract. Then prepare the cream cheese swirl by beating together cream cheese with sugar, egg yolk and vanilla. Swirl the cheese mixture into the top of each muffin using a toothpick and bake. Amazing muffins in only 30 minutes!

Heat the oven and prepare a muffin tray

Preheat the oven to 375 °F. Line a muffin tray with paper muffin cups.

Combine dry ingredients

Mix the flour, pumpkin spice, baking soda and salt together in a large bowl.

Mix pumpkin and sugars together

In a separate bowl, mix together the pumpkin, sugar and brown sugar.

Beat in the eggs, oil and vanilla

Add the eggs, vegetable oil and vanilla extract. Beat well until all ingredients are fully combined.

Add flour mixture to wet ingredients

Carefully add the flour mixture and whisk until there are no lumps.

Add the batter to the muffin tray

Spoon the batter into the muffin tray. Fill each cup about ¾ full.

Prepare the cream cheese swirl

Beat the cream cheese until it is completely smooth. Add the sugar, egg yolk and vanilla extract and continue beating until all ingredients are fully combined.
