Start these cookies by mixing the dry ingredients together. Beat some sugar, butter, and queso fresco together in a bowl. Add egg and vanilla extract and mix well. Gradually incorporate the flour mixture with the wet ingredients. Once your dough is ready, make small balls (approx one tablespoon). Place the cookies on baking sheets and bake.
To make Queso Fresco, you will need the following ingredients:
Preheat oven to 350 °F and line 2 baking sheets with parchment paper.
In a large bowl, mix 2 ½ cups of flour, 1 teaspoon of baking soda, ½ a teaspoon of baking powder and ½ a teaspoon of salt.
In a separate bowl, beat 1 ½ cups of sugar, ¾ cup of butter ¾ cup of queso fresco together.
Add one egg to the bowl and beat until combined.
Add one tablespoon of vanilla extract and mix well.
Gradually mix in one cup of flour mixture at a time, until all the ingredients are fully combined.
Roll tablespoonfuls of cookie dough into small balls and place them on baking sheets about 1 inch apart.
Place the baking sheets in the oven and bake for 9-11 minutes.
Leave the cookies on the baking sheets for 2 minutes before transferring to wire racks to cool completely.
Serve these sugar cookies with glasses milk.
